O’Mega’ Stuffed Salmon!

 

Our online programme is now live and the team is growing!  This is a little window in to some of the yummy recipes in the programme.

This little belter is absolutely delicious and packed full of everything you need. It’s also yummy hot or cold so cook a few up and keep in the fridge! Remember – good food prepping helps with keeping on point with your diet!

Serves 2

Ingredients
2 Salmon fillets – skin on or off
3 tbsp of cream cheese – this was reduced fat to fit my macros
1 red onion finely diced
3 big handfuls of spinach
2 cloves of garlic, minced

Method
Cut into the salmon to create a little pouch – not all the way through, and peel back. In a frying pan, heat up a teaspoon of coconut oil (or the oil of your choice) and add the onion and garlic. Let these cook through for a couple of minutes until the onion has softened then pop in the spinach. It will look like a lot but it wilts down a lot too. Once this has completely softened, add in the cream cheese and mix the lot together. Once it’s all creamy and yummy, let it cool a little and then spoon it in to the pouches you’ve created and fold the flap over. Pop on to a baking tray and into a pre-heated oven at 180 degrees for 20 minutes or until the salmon is cooked through.

Then simply pair with some leafy green veggies and ENJOY!!!
