Healthy Cottage Pie

Some days only a lovely, deep bowl of comfort food will do!  But generally, comfort food means something which isn’t the best choice nutritionally, right?  Well not now!  This hearty, healthy cottage pie is just like a hug in a bowl and here’s how to make it.

Ingredients:

500g lean steak mince (5%)
3 carrots, sliced
2 onions, finely chopped
3 cloves of garlic
1 tbsp red wine vinegar
1 tbsp balsamic vinegar
2 tsp dried parsley
2 tsp dried thyme
4 bay leaves
500ml beef stock

For the topping:

3 parsnips
1 carrot
4 sweet potatoes
10g butter

Method:

Add the onions and garlic to a hot frying pan and sweat off for 2-3 minutes, don’t let them colour.  Add the mince to the pan and brown.  Add the vinegars, carrots and herbs to the pan and cook off for 10 minutes or so.  Add in the stock, lower the heat, pop in the bay leaves and leave to simmer for 40-45 minutes.

Meanwhile, steam the veggies for the topping.  Once softened, drain the water, season, add in the butter and mash.

If you need to, thicken the sauce of the mince with some plain flour or cornflour, pour into your bowl and allow to cool.  Then spoon over your mash, roughen the top with a fork and then pop in the oven for 45 minute to brown and cook through.

Serve with some nice steamed green veggies for a delicious, balanced and healthy meal.

To make this a veggie alternative, switch out your beef mince for a meat free alternative and use a vegetable stock instead of beef.  YUMTY!
