These little crispy delights feel like a treat, but are a delicious and healthy alternative to your conventional deep fried hash brown. And who doesn’t love a hash brown???
INGREDIENTS
2 large courgettes, coarsely grated
30g Parmesan cheese, finely grated
1 tbsp self raising flour
1 tbsp Lucy Bee Coconut Oil
Salt and pepper
Method
Pop your grated courgettes into a tea towel and squeeze as much liquid as your can from them. Put all the ingredients in a bowl and season well.
Heat the oil in a non-stick frying pan. Shape the mixture into balls about the size of your average golf, place in pan and flatten off slightly. Let them sizzle, undisturbed for a few minutes to get nice and brown. Flip over and repeat the process.
Serve hot from the pan! I topped mine with a runny poached egg and sauteed spinach! Absolutely delicious!
