Tasty Savoury Muffins

I always advocate eating a healthy breakfast to get the day started.  Not because it’s the secret key to massive weight loss, nor because it’s a cardinal sin if you don’t!  Simply because that’s what has worked for me in the past.  Now, there is an evidence base to support both of my flippant remarks, but frankly – I haven’t got time to cite them here!  So, I’m gonna go with my own experience and what seems to work pretty damn well for my team of clients!

If you’re anything like me, most mornings go from, ‘I have loads of time….’ to, ‘sh1t I’m going to be late!!’ almost every day!  I don’t know how, or where the time goes – it just vanishes!  So any time savers for me are always welcome!  Something I can munch on the go, or something portable but will remain tasty when cold and in tupperware!  Come on, we’ve all been there haven’t we?  The packed lunch you prepped the night before which has transformed into a sloppy, soggy, disturbingly grey mess nevermind what it then tastes like – I don’t want to eat it!

These little egg muffins are a revelation!  Delicious eaten hot or cold and so versatile you can pack them full of pretty much anything you like!!  These ones are a mix of chorizo, leek, spinach and blue cheese and bacon, leek and spinach.  Yum, right

Ingredients

For the chorizo ones:

Half a spicy chorizo
20g blue cheese
Big handful spinach
1 leek, sliced
4 large, free range eggs well beaten

For the bacon, leek and spinach:

4 slices of unsmoked dry cure thick cut bacon
1 leek, sliced
Big handful spinach
4 large, free range eggs well beaten

Method

Which ever muffin you choose, firstly fry off all of the ingredients (not the eggs!) in a little coconut oil until they’re browned off and softened.  Season well and divide between 6 muffin cases.  Season the beaten eggs and pour equally over the 6 muffins.  Pop into the oven and bake at 200C for about 15-20 minutes.

Let them cool completely (if you haven’t munched one straight from the oven!) and pop into a large tupperware and keep in the fridge happily for 3/4 days.

These are a great breakfast choice or an equally delicious snack on the go!  Give them a try and experiment with your own flavour choices!
