Cheesy courgette ‘bread’ sticks – DELISH!

 

I’m a real sucker for cheese twists and dips! My nutrition plan doesn’t allow for those tasty treats so I’ve discovered an alternative and I have to say, these lil bad boys are simply spectacular!! I’ve paired them with home made spicy ketchup and guacamole – but a garlic mayo would be banging too!! Give them a go and let me know what you think!

Ingredients

3 shredded courgettes (about 3 medium)
3 eggs
1/3 cup flour
1 teaspoon salt
2 cups shredded mozzarella (or any) cheese
Italian seasoning

Instructions

Preheat oven to 200 degrees C.
Sprinkle the shredded courgettes with salt (we used Himalayan but this isn’t mandatory) to release some of its moisture. Let sit 10-15 minutes, then squeeze courgettes in a clean cheese towel to release most or all of the liquid.
Mix courgettes, eggs and flour in a medium bowl. Grease a baking sheet with coconut oil (or your choice) and spread the courgette mixture into a large thin rectangle.
Bake for about 25 minutes or until the edges are nicely brown. Make sure it’s nice and golden on the sides and top so the crust isn’t mushy.
Reduce the oven to 180 degrees C, sprinkle the crust with cheese and Italian seasoning, and continue baking until the cheese is just melted.
Let cool a few minutes, then cut into sticks. Serve with ketchup or guac or garlic mayo or any sauce your heart desires. ENJOY!!!
